Три вида пиццы, которые обязательно нужно приготовить самому

Пицца – любимое лакомство детей и взрослых. Для многих субботний поход в пиццерию стал доброй семейной традицией. Но сочную и сытную пиццу совсем несложно приготовить дома. И сегодня мы расскажем о главных секретах приготовления разных видов теста для пиццы и поделимся отличными рецептами.

Пицца на бездрожжевом тесте

Настоящая пицца всегда готовится на бездрожжевом тесте. Его можно готовить на воде или кефире. Но самый низкокалорийный вариант – бездрожжевое тесто на воде.

Для теста:

  • мука – 500 г (лучше использовать муку высшего сорта);
  • яйца – 2 шт;
  • вода – 200 мл;
  • растительное масло – 2 ст.л.;
  • соль – по вкусу.

Для начинки:

  • томатный соус – 200 мл;
  • сыр твердый – 500 г;
  • колбасные изделия – 500 г;
  • оливки – по вкусу.

Просейте муку и смешайте ее с солью. Сформируйте из муки горку с небольшим углублением по центру. Вбейте в углубление яйца и все перемешайте. Затем добавьте теплой воды и растительного масла. Полученное тесто тщательно вымешивайте руками в течение 6-10 минут. Если покажется, что тесто слишком липкое – добавьте немного муки.

Перед запеканием тесто нужно накрыть пищевой пленкой или полотенцем и оставить на полчаса в теплом месте.

Когда тесто настоится, можно приступать к начинке. Вы можете сделать одну большую пиццу прямоугольной или круглой формы. Или можете сделать несколько небольших пицц, разделив тесто на шарики, каждый из которых раскатайте скалкой. Поверхность раскатанного теста смажьте томатным соусом, выложите нарезанную кусочками колбасу, оливки. Сверху обильно посыпьте тертым сыром. Чем больше будет сыра – тем сочнее получится пицца. Запекайте в духовке полчаса при температуре 180 градусов.

Перед подачей можно украсить веточками свежей зелени.

Хозяйке на заметку:

  • Растительное масло необходимо, чтобы тесто получилось более эластичным. Для пиццы лучше используйте оливковое масло.
  • Оставляя тесто, его нужно обязательно накрыть полотенцем, чтобы ограничить контакт с воздухом. Если тесто сильно обветрится, оно потеряет свою эластичность и его сложно будет раскатать в тонкий слой.
  • Этот рецепт бездрожжевого теста вы можете использовать не только для пиццы, но и для пирожков или пельменей. Если хотите приготовить сладкую выпечку на его основе – добавьте в тесто сахара по вкусу.
  • Готовое бездрожжевое тесто можно хранить в холодильнике в течение недели, предварительно обернув его пищевой пленкой.

Закрытая пицца (дрожжевое тесто)

Для начинки:

  • ветчина – 150 г;
  • куриная грудка – 100 г (вареная);
  • моцарелла – 50-100 г;
  • сыр твердый – 100 г;
  • помидоры – 1 шт;
  • масло оливковое – 2 ст.л;
  • свежая зелень – 3-4 веточки;
  • соль, специи – по вкусу.

Для теста:

  • мука – 2 ст.;
  • дрожжи сухие – 2 ч.л.;
  • оливковое масло – 1 ст.л.;
  • вода – 100 мл;
  • соль – по вкусу.

Займемся тестом. Для этого растворим дрожжи в теплой воде. Добавим муку и растительное масло, и хорошенько вымешием тесто руками. Накроем тесто полотенцем и оставим в теплом месте на 2-3 часа.

За это время приготовим начинку. Ветчину, куриную грудку, моцареллу и помидоры нарежем кубиками. Сыр твердый натрем на терке. Смешаем все ингредиенты в одной миске. Добавим соль, специи и оливковое масло.

Когда тесто подошло, разделим его на несколько шариков. Каждый шарик раскатаем в лепешку. На половину лепешки выложим заготовленную начинку. Закроем начинку открытой половиной лепешки и прижмем края верхнего и нижнего слоев лепешки друг к другу.

Запекать в духовке при 180 градусах в течение 20 минут.

Хозяйке на заметку:

  • Воду наполовину можно заменить молоком или газированной минеральной водой. Так тесто получится нежнее.
  • Перед добавлением начинки тесто можно смазать томатным соусом.

Итальянская пицца «Маргарита»

И напоследок приготовим классическую итальянскую «Маргариту». Кстати, по мнению самих итальянцев, именно этот рецепт является настоящей пиццей, а все остальное – кулинарные фантазии поваров.

Ингредиенты:

  • сухие дрожжи активные – 40 г;
  • теплая вода – 250 мл;
  • мука – 375 г;
  • оливковое масло – 1 ст. л.;
  • соус для пиццы – 150 г;
  • моцарелла – 250 г;
  • помидор – 2 шт;
  • соль – по вкусу.

Разведем дрожжи в 100 мл теплой виды и добавим просеянную муку. Все хорошенько перемешаем. Добавим оливковое масло и соль. Постепенно вводим остальную воду, продолжая замешивать тесто. Затем хорошо вымешиваем тесто руками. Обернув тесто пищевой пленкой, ставим в теплое место на 2-3 часа.

Когда тесто будет готово, разделим его на два половины. Каждую часть раскатаем в небольшую лепешку. Поверхность лепешек смажем томатным соусом, сверху щедро посыпаем тертой моцареллой и выкладываем ломтики томатов. Выпекаем 20 минут в духовке при температуре 220 градусов. Перед подачей посыпать листочками зеленого базилика.
