Скорее всего Вы не раз слышали о так называемых суперфудах, которые якобы способны сделать нас здоровыми и заменить собою другие продукты. К таким относят и семена чиа. Рассказываем, что такое чиа, чем полезны и как их можно приготовить.

Семена чиа – это семена растения “испанский шалфей” или “белая чиа”. Они издавна известны в Мексике, а теперь это растение культивируют практически по всей Южной Америке и Австралии.

Польза семян чиа

Зернышки испанского шалфея настолько ценны, что были в ходу в качестве валюты у ацтеков. Неизвестно, как тогда люди узнали ценность состава семян, но нынешние исследователи сообщили следующие факты о них:

  • В чиа содержатся 8 незаменимых для организма человека аминокислот, при этом количество белка в семенах может достигать показателя в 17%. Если употреблять их ежедневно, то можно без вредных последствий перейти на вегетарианское питание.

  • Семена содержат клетчатку, которая стимулирует работу кишечника, но при этом не вызывает метеоризма.

  • Семена чиа имеют способность разбухать, попадая в жидкость. Поэтому они способны надолго избавить от чувства голода.

  • Омега-3 в них не меньше чем в красной рыбе.

  • Чиа содержат большой объем кальция.

  • Семена чиа также богаты железом, селеном, магнием, калием.

Сфера применения в кулинарии семян чиа не ограничена. Это могут быть супы, салаты, энергетические напитки, протеиновые коктейли, выпечка. Чаще всего их применяют как биодобавку, поскольку ярко выраженного вкуса или запаха чиа не имеют, а значит, и сильного влияния на блюдо не окажут. Однако есть одно «но»: в зернах содержатся фитаты, которые мешают всасыванию некоторых полезных веществ из других продуктов. Чтобы избежать их воздействия, рекомендуется замачивать семена чиа на 15 минут перед готовкой.

Кроме того, не стоит употреблять данный суперфуд людям с пониженным давлением, синдромом раздраженного кишечника, аллергией на кунжут или горчицу, а также во время приема курса антикоагулянтов и аспирина. Возможна и личная непереносимость продукта, потому первый раз лучше съесть 10-15 г чиа в чистом виде, чтобы удостовериться в её отсутствии.

Пудинг на кокосовом молоке

  • 35 г семян чиа;

  • 100 мл кокосового молока;

  • 15 мл жидкого мёда;

  • 1 манго, половина персика или горсть ягод;

  • 30 г миндаля, кешью или грецких орехов.

Смешать кокосовое молоко, семена и мед. Затем отправить в холодильник на 8 часов. За это время жидкость загустеет, а чиа должны приобрести желеобразную структуру и в 4 раза увеличиться в размере.

Перед подачей на пудинг следует выложить мелко порезанный фрукт и орехи.

Ягодный смузи

  • 50 г малины;

  • 50 г ежевики;

  • 50 г голубики;

  • 50 мл гранатового сока;

  • 30 г семян чиа;

  • 20 г жидкого мёда;

  • 50 мл фильтрованной или кипяченой воды.

Блендером измельчить ягоды с чиа, залить соком и водой, добавить мёд и взбить миксером.

Рисовая каша с чиа

  • 100 г коричневого риса;

  • 2 яйца;

  • 70 г семян чиа;

  • 30 мл соевого соуса;

  • 7-8 перьев зеленого лука;

  • 50 г свежего укропа;

  • 50 мл теплой воды или овощного/мясного бульона.

Рис отварить в подсоленной воде до полуготовности. Чиа замочить на 10 минут в выбранной жидкости, затем отправить к рису, одновременно добавить в его мелко рубленую зелень и соевый соус. Довести кашу до готовности. Отдельно сварить яйца вкрутую, нарезать кубиками и смешать с рисом. Перед подачей можно дополнительно посыпать семенами чиа.

Крекеры с томатами

  • 60 г сушеных томатов;

  • 10 г сушеного базилика;

  • 35 г семян чиа;

  • 5 г соли;

  • 40 мл жидкого мёда;

  • 70 мл теплой воды;

  • 5 мл оливкового масла;

  • 60 мл свежего лимонного сока (пакетированный не подойдет, поскольку в нем содержится сахар, лучше выдавить сок 1 лимона).

Семена замочить на ночь в теплой воде. На утро смешать их с томатами и базиликом, затем перемолоть блендером. Полученную смесь залить медом, лимонным соком и оливковым маслом, тщательно вымешать и выложить в виде пласта на покрытый пекарской бумагой противень. Высота будущих крекеров не должна превышать 8 мм. Спустя сутки их можно употреблять в пищу.

Полезный йогуртовый десерт

  • 70 мл греческого йогурта без добавок и подсластителей;

  • 35 г семян чиа;

  • 30 г овсяных хлопьев;

  • 50 мл молока;

  • половина банана;

  • 60 г сезонных ягод.

Банан пюрировать блендером, добавить все остальные ингредиенты и слегка взбить миксером. Полученную смесь перелить в стакан, накрыть пищевой пленкой и отправить в холодильник на ночь.

Этот рецепт отлично подходит для питательного и богатого полезными веществами быстрого завтрака. Перед подачей такой йогурт следует тщательно перемешать.

Пряное тыквенное печенье

  • 30 г тыквы;

  • 150 г муки;

  • 70 г семян чиа;

  • 1 банан;

  • 60 г сливочного масла;

  • 60 г сахара;

  • 15 г разрыхлителя;

  • по 10 г корицы, мускатного ореха и молотого имбиря.

Банан и тыкву пюрировать, масло растопить и влить к ним, затем добавить чиа, корицу, имбирь и мускатный орех, перемешать. Всыпать муку с разрыхлителем и замешать тесто.

Полученную массу разместить слоем толщиной в 1 см на застеленном пекарской бумагой противне. Мокрым ножом наметить будущие квадратики печенья, вводя его на 0,5 см. Выпекать 20-25 минут в разогретой до 180 градусов духовке.

Банан можно заменить 2 яйцами, а сливочное масло – кокосовым.

Омлет с семенами чиа

  • 3 яйца;

  • 35 г семян чиа;

  • 40 мл молока или сметаны;

  • 1 луковица;

  • 1 болгарский перец.

Яйца взбить с молоком/сметаной, в полученной смеси замочить на четверть часа семена чиа.

Лук и болгарский перец нарезать полукольцами, слегка обжарить на сковороде в растительном масле, ввести яйца, подсолить и накрыть крышкой. Через 2-5 минут перевернуть омлет на вторую сторону и держать на маленьком огне до полной готовности.

Куриные наггетсы

  • 2 куриных филе;

  • 2 яйца;

  • 80 г семян чиа;

  • 2 зубчика чеснока;

  • сушеные травы по вкусу;

  • панировочные сухари.

Филе разрезать на небольшие кусочки. Яйца взбить, замочить в них семена на 15 минут. Затем добавить к ним травы, соль, давленый чеснок, тщательно перемешать.

Кусочки мяса обмакивать в яичную смесь, а затем в панировочные сухари. Обжаривать по 3-5 минут на растительном масле.
