В холодное время года хочется похлебать наваристого густого супа с грибами, мягчайшим мясом, яркими овощами. Такой суп насытит, согреет, подбодрит пряностями. К тому же, не даст набрать лишних килограммов, которые зимой так и липнут. Предлагаем 10 рецептов интересных супов, которые вы обязательно должны попробовать!

1. Куриный суп с овощами и грибами

Нежный сливочный суп с курицей, шампиньонами и яблоками! Очень вкусный и простой в приготовлении.

Ингредиенты:

  • 300 г курицы (любые части, лучше с косточкой);
  • 150 г шампиньонов (можно замороженных);
  • луковица;
  • половина красного болгарского перца;
  • кислое яблоко;
  • 3 картошки;
  • 50 г сливочного масла;
  • 1 ст. л. муки;
  • 80 мл сливок (любой жирности);
  • 2 л воды;
  • соль, перец, зелень по вкусу.

Промойте курицу, залейте водой и варите до готовности. Овощи промойте и очистите. Перец нарежьте соломкой, картофель – кубиками, лук измельчите, шампиньоны или другие грибы нарежьте тонкими пластинами. Яблоко очистите и натрите на терке.

В сковороде на среднем огне растопите половину сливочного масла, обжарьте лук и грибы до мягкости, затем добавьте яблоко, тушите две минуты. Выложите зажарку на отдельную тарелку. А в сковороду добавьте оставшееся масло, муку, обжарьте секунд 30, помешивая, затем влейте пару ложек бульона из кастрюли и хорошенько перемешайте, чтобы не было комочков.

Бульон с готовой курицей процедите через мелкое сито, мясо снимите с кости, верните кастрюлю на плиту. Добавьте специи, доведите до кипения. Закиньте картофель, варите минут 5, затем отправьте в суп зажарку, перец и варите еще минут 8. Добавьте мучную смесь, влейте сливки. Прокипятите. Всыпьте зелень, накройте крышкой и оставьте на минут 5-10. Затем подавайте.

2. Пряный крем-суп из нута

Марокканский рецепт острого супа с нутом и яркими специями. Прекрасно насытит и согреет в холодное время года! Все используемые специи – молотые.

Для супа понадобится:

  • 200 г нута;
  • луковица;
  • 4 зубчика чеснока;
  • пучок шпината;
  • 1 литр овощного бульона или отвара нута;
  • 200 мл томатного пюре (протертых томатов);
  • 2 ст. л. растительного масла;
  • 1/2 ч. л. корицы;
  • 1 ч. л. зиры;
  • 1/2 ч. л. чили;
  • 1 ст. л. сладкой паприки;
  • 1 ч. л. сахара;
  • соль по вкусу.

Нут лучше замочить на ночь в воде, на следующий день слить и поставить вариться в большом количестве воды на медленном огне 40 минут.

Лук и чеснок почистите, мелко нарежьте.

В сковороде разогрейте растительное масло, обжарьте зиру до запаха, добавьте лук с чесноком и жарьте, помешивая, до мягкости. Добавьте чили, паприку, измельченный шпинат. Жарьте три минуты, затем влейте отвар нута, томатное пюре, добавьте сахар, посолите. Прогрейте еще 5 минут, затем перелейте в кастрюлю к нуту. Доведите до кипения на среднем огне, варите 10 минут, затем пробейте блендером. Готово!

Хозяйке на заметку: нут можно брать вареный консервированный, тогда его не придется замачивать и варить 40 минут.

3. Щи из кислой капусты с перловкой

Для щей понадобятся такие ингредиенты:

  • 500 г квашеной капусты;
  • 300 г говядины;
  • 50 г сушеных (или свежих) лесных грибов;
  • 30 г перловой крупы;
  • 1 картошка;
  • луковица;
  • морковка;
  • зубчик чеснока;
  • 1 ст. л. растительного масла.

В большую кастрюлю положите промытое мясо, залейте водой почти доверху. Отварите мясо на медленном огне до готовности, снимите пенку после закипания. Пока мясо варится, замочите в кипятке грибы. Промойте и залейте водой перловку.

Готовое мясо выберите из кастрюли шумовкой, в бульон с жидкостью добавьте грибы и перловку. Кислую капусту порежьте мельче, чтобы удобно было есть. Очищенный картофель нарежьте средними кубиками. Сложите все в кастрюлю.Доведите до кипения и варите на средне-медленном огне.

Почистите лук, морковь и чеснок. Морковь натрите на терке, лук с чесноком измельчите. Обжарьте овощи в сковороде на растительном масле на среднем огне до мягкости. Затем добавьте зажарку в суп. Посолите, поперчите, перемешайте.

Варите щи до готовности овощей. Готовому супе перед подачей дайте настояться под крышкой. К тарелке кислых щей с перловкой идеально подходит черный хлеб и сметана. Приятного!

Кстати, кислая капуста не только богата витамином С, но и отпугивает микробов, которые не любят кислой среды. Поэтому зимой обязательно включите в рацион кислую капусту!

4. Томатный суп с рассольным сыром

Этот суп вы приготовите за 10 минут! Очень вкусный, простой в приготовлении, полезный, ароматный и яркий!

Ингредиенты для супа:

  • 1 кг помидоров (свежих или консервированных в собственном соку);
  • большая луковица;
  • 2 зубчика чеснока;
  • 100 г рассольного сыра (фета);
  • 2 ст. л. оливкового масла;
  • 1/2 л воды;
  • соль, перец по вкусу;
  • по чайной ложке сушеного (или свежего) розмарина и базилика.

Если вы используете свежие помидоры, то снимите с них кожицу. Для этого залейте на несколько минут кипятком, предварительно сделав крестообразный надрез на плодоножке. Выберите помидоры из воды, кожица легко отойдет. Нарежьте помидоры мелким кубиком.

Лук и чеснок почистите, измельчите и обжарьте в высокой сковороде или кастрюле на оливковом масле до мягкости. Добавьте специи, прогрейте минутку и забросьте помидоры. Готовьте минут 10, периодически помешивая. Затем влейте воду, доведите до кипения и варите еще несколько минут. Пробейте блендером и подавайте с зеленью и кусочками сыра фета. К такому супы отлично подходят чесночные гренки.

Хозяйке на заметку: свежие помидоры в этом супе запросто можно заменить на консервированные в собственном соку. Выбирайте консервированные кусочками (они без кожицы!) и просто пробейте блендером.

5. Суп бобовый

Очень питательный суп из бобовых: фасоли, чечевицы, гороха. Подадим его с жареным беконом. Объедение!

Ингредиенты (бобовые будем измерять стаканом):

  • 150 мл белой фасоли;
  • 150 мл колотого гороха;
  • 150 мл красной чечевицы;
  • 250 мл консервированного горошка;
  • морковь;
  • луковица;
  • половина стебля лука-порея;
  • 150 г корня сельдерея;
  • пару ломтиков бекона холодного копчения;
  • несколько вяленых помидоров;
  • соль, перец, зелень по вкусу;
  • 1 ч. л. молотой красной паприки;
  • 1 ст. л. растительного масла.

Фасоль замочите на часа 3-4 в холодной воде. Колотый горох и чечевицу просто промойте.

В большую кастрюлю налейте 2 л воды (или куриного бульона), выложите фасоль и варите до полуготовности, затем добавьте горох и варите еще минут 20. Забросьте к бобам чечевицу, доведите до кипения и варите 20 минут.

Лук и лук-порей порежьте мелко. Очищенные морковь и сельдерей измельчите кубиками. В сухой сковороде обжарьте нарезанный полосками бекон до хруста. Выложите на салфетку. А на жире, понизив огонь, обжарьте лук до мягкости. Добавьте и прогрейте специи. Затем выложите морковку с сельдереем. Жарьте, периодически помешивая лопаточкой, до золотистого оттенка овощей.

Зажарку добавьте в суп к бобовым, посолите, варите 5 минут. Добавьте зелень по вкусу, выключите огонь и оставьте суп под крышкой на минут 15. Подавайте с хрустящим беконом.

6. Крем-суп с брокколи и сыром

Сырный, нежный, полезный! В таком виде брокколи будут есть даже те, кто морщится от одного их упоминания. Рекомендуем и большим, и маленьким!

Ингредиенты:

  • 1 1/2 стакана овощного или мясного бульона;
  • 2 стакана разделенной на соцветия брокколи;
  • луковица;
  • морковь;
  • зубчик чеснока;
  • 80-100 г тертого желтого сыра;
  • 1/2 стакана сливок (любой жирности);
  • пучок петрушки;
  • соль, перец по вкусу.

Очистите и промойте овощи. Порежьте лук, чеснок мелко, морковь – кружочками. Сложите соцветия брокколи, лук, морковь, чеснок в кастрюлю, залейте бульоном, посолите, поперчите и варите 15 минут до мягкости брокколи. Кстати, если овощи замороженные, то предварительно можете не размораживать. Затем пюрируйте блендером.

Влейте сливки, прокипятите, снимите с огня и всыпьте сыр. Перемешайте и подавайте с зеленью, когда сыр расплавится.

7. Суп на курице с овощами

Для этого супа подойдут любые овощи, которые в данный момент есть в вашем холодильнике. Можно использовать готовый микс замороженных овощей для супа.

Ингредиенты:

  • 2 л воды;
  • 500 г курицы (любых частей);
  • 2 луковицы;
  • 2 ветви сельдерея;
  • зубчик чеснока;
  • морковка;
  • 300 г консервированной фасоли;
  • 50 г спаржевой фасоли;
  • 100 г консервированной кукурузы;
  • 1/2 стакана томатного пюре;
  • лавровый лист;
  • 4 горошины черного перца;
  • соль, перец по вкусу;
  • дольки лимона и измельченная зелень для подачи;
  • 1/3 ч. л. молотого чили (или хлопьев) по желанию.

Залейте мясо водой, доведите до кипения, варите 5 минут, затем воду слейте и залейте мясо новой. Доведите до кипения, понизьте огонь и добавьте одну очищенную луковицу, один стебель сельдерея, лавровый лист, горошины перца.

Пока овощи с мясом варятся, измельчите оставшийся лук, сельдерей, чеснок, натрите морковь на терке и обжарьте на масле в сковороде до мягкости. Затем добавьте кукурузу, спаржевую и обычную фасоль, жарьте пару минут, затем влейте томатное пюре и доведите до кипения.

Когда куриное мясо будет отходить от кости, бульон процедите. Отделите мясо от костей и выложите обратно в бульон. Добавьте зажарку, посолите и готовьте еще 5 минут.

Все вкусы воедино свяжет долька лимона, добавленная в конце. Подавайте суп с зеленью.

8. Овощной суп с колбасками

Томаты, фасоль и копченые колбаски – просто объедение! Варим зимний суп!

Ингредиенты:

  • 200 г белой фасоли;
  • крупная луковица;
  • морковь;
  • 100 г корневого сельдерея;
  • 2 стебля черешкового сельдерея;
  • небольшой кабачок;
  • пучок шпината;
  • 350 г томатов в собственном соку;
  • 3 охотничьи колбаски;
  • по щепотке душицы, перца и молотой паприки;
  • 2 ст. л. растительного масла;
  • лавровый лист.

Фасоль промойте и замочите в воде на 4 часа. Залейте свежей водой, добавьте одну порезанную кольцами луковицу, измельченный чеснок и один стебель сельдерея. Варите на слабом огне до готовности. Солить не надо. Воду не сливайте!

В кастрюле с толстым дном обжарьте на масле измельченный лук до мягкости. Добавьте нарезанную кубиками морковь и корень сельдерея, жарьте, помешивая, минуты 4-5. Затем всыпьте измельченный черешковый сельдерей, прогрейте минутку и влейте литр воды или бульона, а также отвар фасоли. Варите после кипения 5 минут, затем добавьте полукружки очищенного кабачка и кружочки колбасок. Через 4 минуты добавьте шпинат, специи, томаты в собственном соку. Доведите до кипения и варите несколько минут.

Перед подачей суп должен настояться под крышкой минут 10-15. Приятного!

9. Быстрый суп из нута (всего три ингредиента!)

Для этого супа рекомендуем использовать консервированный вареный нут, тогда на приготовление первого блюда уйдут считанные минуты. Итак, нам понадобится нут, бульон и чеснок. Специи – на ваше усмотрение.

Ингредиенты:

  • 200 г консервированного вареного нута;
  • зубчик чеснока;
  • 1/2 ч. л. сушеного розмарина;
  • соль, перец по вкусу;
  • 500 мл бульона (мясного или овощного);
  • 1 ст. л. оливкового масла.

На ложке оливкового масла в кастрюле обжарьте измельченный чеснок и розмарин. Огонь – средний. Жарьте до мягкости чеснока. Влейте бульон и добавьте нут. Доведите до кипения, посолите, поперчите, варите минут 5. Осталось только взбить блендером. Подавать такой суп можно с сухариками, жареным беконом, копченой паприкой.

10. Гороховый суп с томатами

Питательный и сытный гороховый суп раскрасим помидорами!

Ингредиенты для супа:

  • стакан колотого гороха;
  • 3 картошки;
  • помидор;
  • луковица;
  • морковь;
  • зубчик чеснока;
  • лавровый лист;
  • соль, перец, зелень по вкусу;
  • 2,5 л воды.

Морковь и лук очистите, морковку натрите на терке, лук нарежьте кубиком.

Промойте горох, всыпьте в кастрюлю, залейте водой так, чтобы покрыла горох, доведите до кипения. Затем воду слейте, откинув горох на сито.

Залейте 2,5 л воды в кастрюлю с горохом, добавьте нарезанные морковь с луком и варите до готовности гороха на средне-медленном огне в течение часа.

Помидор и картофель почистите, нарежьте средним кубиком, чеснок порежьте мелко.

К готовому гороху в кастрюлю добавьте помидор и картофель. Варите минут 15. Затем добавьте специи, зелень, посолите и варите еще несколько минут. Готово!

Хозяйке на заметку: по желанию лук, чеснок и морковь можно обжарить на ложке растительного масла до мягкости.
